I was sorting my storage cupboard in my kitchen and realized I had a lot of ingredients I needed to use now before it was time to throw them away, the time to do a cake for the princess.
So I checked on internet to find a recipe with sliced almonds and jam, I found of course many of them and did a mix between 2-3 recipes.
I was pretty sure what should have been the ingredients but I’m not good enough to know the quantity of flour, sugar, etc…
The result was really nice and I highly recommend you to try this cake recipe.
Ingredients:
- 100 gr of butter
- 180 gr of sugar
- 3 eggs
- 200 gr of flour
- 1 teaspoon baking powder
- 150 gr sliced almonds and a few to pour on the top of the cake
- 5 soup spoons of apricot jam
- 1 soup spoon rum
- 3 soup spoons dried raisins
Preparation:
Preheat the oven at 180°C.
Put the dried raisins into the rum while preparing the cake mixture.
Mix first the eggs with the sugar.
Add the flour, the baking powder and the butter at ambient temperature and pulse until just blended.
Add the raisins with the rum and the sliced almonds and mix manually.
Pour half of the mixture into a 25 cm round cake pan, spread the jam and cover with the second half of the mixture.
Pour a few sliced almonds to cover the top of the cake and bake it for 40 minutes.
Wait until the cake is cold and enjoy it with your beautiful princess.
It’s perfect if you serve it with a ball of vanilla ice cream.
